No reason to get down about all this...
1) Your husband does have ONE job offer. A job means money coming in which will take some of the stress off your family.
2) No reason why your hubby can't take the one job, and continue to look for others that enable him to stretch and grow.
3) Suggest that your hubby contact the company that *didn't* offer him the job that he would have preferred, and talk to them about why they didn't hire him. Sounds a little daft -- but if you do it in the right way (telling them that you are sincere and enthusiastic about getting into that field and would like to know how you can build your skills/expertise to be a stronger candidate), most are flattered and willing to be helpful.
4) You have been so strong and steadfast through all this. It's hard, I know -- I lost my job a month ago, still have nothing, and have no significant other, let alone someone as wonderful as you, to stand by me.
5) Feel good, stay strong, and keep on keeping on. We're all pulling for you and are in this together. :)
