Wow ... this is a great thread. I got in trouble for being late for supper one night because I was having so much fun at the gym listening to all my new songs (It's not always that much fun....so I figured that I better enjoy it while it lasted)
Some of my favourite tunes have been:
Old Time Rock and Roll plus Lock & Load - Bob Seger
Glory Days, Hungry Heart - Bruce Springsteen
Mustang Sally - CCR
I wanna rock and roll all night - Kiss
Boondocks - Little Big Town
Gimme Three Steps - Lynard Skynard
Janie, Dude Looks like a Lady and Pink - Aerosmith
Cover of the Rolling Stone - Dr. Hook
I love country but I'm afraid I haven't found too many country songs to work out to. I'm going to download afew of your suggestions though.

Got a few more after my walk this morning:
"The Sweet Escape" by Gwen Stefani
"All I Wanna Do" by Sheryl Crow
"I Fall to Pieces" - Patsy Cline (good for warm up or cool down)
"Proud Mary" - Creedence Clearwater
"Girls Just Want To Have Fun" - Cyndi Lauper
"Suddenly I See" - KT Tunstall
Any others? It gets boring listening to the same songs too much.

PS Glenn Miller's "In The Mood" is great for walking.
