I make a steamed suet pudding once a year for Christmas. I was going to put the recipe here but it doesn't work well with substitutes. Real suet is hard to come by unless you live in a farming community. Butter can be substituted but it needs to be chilled and put through a meat grinder to get the right texture. It takes two cups also. Store bought suet is not the same thing.
The pudding has currants, raisins, dates and dried apples in it. Very rich and very good too.
also it has to be steamed for three hours. A lot of work.
Here is my traditional oatmeal date cookie instead.
2 cups of large oats chopped fine in a blender one cup at a time.
2 cups (or more) flour
1/2 tsp baking powder
1/4 tsp baking soda
pinch of salt. (as much as you like) or none.
Cream 3/4 cup butter with 1/3 cup of dark brown sugar.
Add one large egg and 1/2 cup of molasses.
Combine and mix as for roll cookies. chill if necessary or add more flour.
Roll out 1/4 inch thick. Cut with tuna can. Cut hole in the ones for the top.
don't over cook. Fill with cooked dates. Glaze and put a cherry in the hole in top.
350 for around ten minutes.
