Well, I think it has to do with not "denying" ourselves whatever it is we think we want at the moment, because we are "denying" ourselves the smoke, so we tend to say "if I'm doing that, I'm gonna eat this..." So when or if you don't feel "deprived" on a subconscious or conscious level, the food replacement slows way down. I think it's connected to the reward center of the brain, too.
